What the new regulation already requires of you.

Chile's food safety regulation (Reglamento Sanitario de los Alimentos, D.S. 977/96), updated in February 2026, moved past validation by visual inspection: food safety now rests on documented evidence. It requires sanitary control of refrigerated transport and recorded traceability, and it also applies to the means of transport and distribution. Every refrigeration cold room must have a temperature-recording device; its absence is a breach of the regulation.
